Ingredients Serving: 4

  1. Semolina - 2 cup
  2. Yogurt - 1 cup
  3. Sliced red tomato - 10 - 12 slices
  4. Eno fruit salt - 1 tablespoon
  5. Salt to taste
  6. Cashew nuts - 10 to 12
  7. Oil - 1 tablespoon
  8. Water - 1 cup
  9. Coriander leaves - 100 grams

Instructions

  1. Mix semolina and yoghurt in a large vessel and keep for 30 minutes.
  2. Now add salt and water as requried, mix it gently and make a batter (neither too runny nor to thick)
  3. Mix it well. And now add eno fruit salt just before making idlies and again mix it well.
  4. Heat the pan and fry the cashew nuts.
  5. Grease the idli plate and put the 2 cashew nuts ,small coriander leaves and one piece of sliced tomato
  6. Pour the batter in idly plate and microwave in high for two minutes
  7. Enjoy hot idly with sambar and coconut chutney.
