ABOUT Baked Finger Millet Shankarpali RECIPE

Ragi Or Finger millet is originated in East Africa and now it cultivated in African countries and Southern Asia. Variety of dishes can be prepared using finger millet as a whole or flour. In Maharashtra, flour is used in many recipes including, Bhakri, Ragi Laddus, ragi kheer etc., Ragi Sattva kheer prepared from ragi is very good for babies. Ragi is a good source of proteins, Minerals. It controls diabetes and has anti-cancer and anti-microbial properties. It reduces bad cholesterol thus prevents cardiovascular diseases.

Ingredients Serving: 8

  1. Ragi flour - 1 1/2 cup
  2. Flour / Maida - 4 1/2 tablespoon
  3. Jaggery - 1/4 - 1/2 cup
  4. Poppy seeds (white)- 1tablespoon
  5. Cardamom powder - 1teaspoon
  6. Ghee - 1/4 cup + 2tablespoon
  7. Warm milk -1/2 or 3/4 cup or as required for kneading
  8. Salt 1/2 teaspoon

Instructions

  1. Mix all dry ingredients together.
  2. Create a well in the center of flour. Melt ghee and jaggery together in a sauce pan. Pour mixture into flour. Start mixing.
  3. Mix well till it form a crumbly texture.
  4. Now add warm milk slowly at a time and start kneading a dough.
  5. Make a little stiff dough. Cover and leep it aside for 15-20 minutes.
  6. Dough will be little crumbly in texture due to ragi flour. If required add little warm milk and knead again. Make small balls from the dough. Roll, keep it thick.
  7. Remove rough edges using shankarpali or pizza cutter.
  8. Cut into diamond shape or any desired shape. Remove it on a plate.
  9. Preheat oven at 180 ° c. Keep prepared shankarpalis on baking tray. Brush it with ghee.
  10. Bake it for 12-15 minutes. Avoid overbaking as shankarpalis may burn and ruin a dish.
