Speculoos (Dutch cookies)

Ingredients to make Speculoos (Dutch cookies)

  • 1 cup unsalted butter
  • 2 tsp vanilla essence
  • 1 cup white sugar
  • 1 1/4 cup brown sugar
  • 2 eggs
  • 3 1/2 cup flour
  • 2 tsp baking soda
  • 2 1/2 tbsp speculoos spice
  • A pinch of salt
  • Speculoos Spice : Make and keep in an air tight jar
  • 8 tsp cinnamon
  • 2 tsp nutmeg
  • 2 tsp ground cloves
  • 1 tsp white or black pepper
  • 1 tsp ground ginger
  • 1 tsp cardamom

How to make Speculoos (Dutch cookies)

  1. Firstly ensure all the ingredients are at room temperature before starting the process. Keep the speculoos spice mix ready too.
  2. Begin by combining the butter and both the sugars together. Add in vanilla essence and when the mixture turns creamy add in one egg at a time. Use an electric mixer for best result.
  3. In an another bowl sift and mix all the dry ingredients together.
  4. With a spatula mix the dry ingredients into the wet mixture. You will get a soft dough.
  5. Depending upon the quantity you will require, divide the dough and wrap in a cling film. I divided mine in 3 parts.
  6. Store in the refrigerator for several hours or overnight for best infusion of spices. I left it overnight.
  7. Roll out the dough to 1/4" thick and cut with cookie cutters. Bake at 180 degree centigrade for 10-15 minutes.
