Ingredients Serving: 7

  1. Basmati rice 1 kg
  2. Bay leaf 2 nos
  3. Green cardamom 3 nos
  4. Black cardamom 2 nos
  5. Star anise 1 no
  6. Black pepper corns 4 nos
  7. Cinnamon stick 1 to 2 nos
  8. Cloves 4 nos
  9. Kapok Buds (Marathi Moggu) 4 nos
  10. Kalpasi 1 teaspoon
  11. Oil 200ml
  12. 1 large lemon juice
  13. Curd 3 tablespoon
  14. Green chillies 3 nos
  15. Chicken(cleaned) 1 kg
  16. Onion 200 grams
  17. Ginger-garlic paste 150 grams
  18. Tomato 2 nos
  19. Red chilli powder 3 tablespoon
  20. Coriander powder 2 tablespoon
  21. Tumeric powder 1/2 teaspoon
  22. Rock Salt as required
  23. Fresh Coriander leaves 3/4 cup
  24. Fresh mint leaves 1/2 cup
  25. Ghee 50 to 100 ml

Instructions

  1. Add the ginger-garlic paste, red chilli pwd, coriander pwd, tumeric pwd, rock salt, green cardamoms , kapok buds (Marathi Moggu) 4 nos.
  2. Add lemon juice, curd, bay leaves, green cardamoms, black cardamoms, star anise, black pepper corns,cinnamon sticks ,cloves and 30 ml oil in a bowl, mix well. Marinate the chicken for 1 hour.
  3. Soak rice for 15 minutes and drain the water.
  4. Boil water with rock salt and 20 ml oil. When water comes to boil add in soaked rice, cook till it is 70% cooked, about 7 minutes, then drain the water and allow the rice to cool.
  5. Take a vessel, add the remaining oil, then add the onions and cook till it turns brown in colour.
  6. Then add marinated chicken, tomatoes, green chillies,mint, coriander leaves and cook on a medium flame for 7 minutes and sprinkle water. Add ghee and cook in medium flame for 25 mins or till the chicken is cooked.
  7. Next, add in the semi boiled rice on top of the chicken, sprinkle coriander leaves and some more ghee.
  8. Turn the heat to low and place iron dosa tawa and above that keep the cooking vessel in which u have done the above cooking.
  9. Cover the vessel with cloth and place lid on top and then keep heavy vessel on top.
  10. Cook the biryani on dum for 60 mins. Then switch off the flame and serve hot with raita.
