ABOUT Plum and Almond tray bake RECIPE

Decided to make this buttery tray bake, as i had some plums lying around. Turned out really superb.

Ingredients Serving: 6

  1. 1 cup Butter
  2. 3/4 cup sugar
  3. 1 1/4 cup Almond (Powdered)
  4. 1 1/2 cup flour
  5. 2 Eggs
  6. 1 tsp Cinnamon
  7. 1 tsp Baking powder
  8. 5 to 6 plums

Instructions

  1. Heat the oven on 180 degree centigrade, butter and line a baking tin with parchment paper.
  2. Mix butter, sugar and ground almonds in a food processor, until the mixture resembles breadcrumbs. Spoon out half of the mix into a bowl and set aside.
  3. Add flour in the processor and whizz until it just forms a dough. Add in a baking tin and press down with the back of a spoon. Bake for 15-20 minutes until golden. Leave to cool for 10 minutes.
  4. For the filling, add butter, sugar and almond mix in the processor, save a few tbsp for the topping. Add in the eggs, flour, cinnamon and baking powder and pulse to a soft batter. Spread this over the baked and cooled base.
  5. Top with plum pieces, caster sugar and cinnamon. Bake again for 20 minutes, then sprinkle with the remaining crumble mix. Bake for another 20 minutes or until it turns golden. Leave to cool in the tin before slicing in squares.
