Ingredients to make Autumn pear cake with walnuts

  • 12 tbsp (4 and 8 tbsp respectively) unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup and 1/3 cup honey
  • 3 large ripe pears, peeled
  • 1 cup walnuts
  • 1 1/2 cup flour
  • 1 tsp Cinnamon powder
  • lemon zest 1/2 tsp
  • 1 tsp Baking powder
  • A pinch of salt
  • 1/2 cup yogurt
  • 1 tsp pure vanilla essence
  • 2 Eggs
  • 1/2 cup Sugar

How to make Autumn pear cake with walnuts

  1. Preheat the oven at 180 degree centigrade. In the cake tin melt the 4 tbsp butter and add 1/2 cup brown sugar and 1/4 cup honey, melt to combine together for 2 minutes. Arrange the pear halves in a circle. Scatter some walnuts, keep aside.
  2. In a large bowl, cream together butter, honey and sugar for about 5 minutes. Add in the eggs, one at a time, beating well after each addition.
  3. Whisk together flour, cinnamon, lemon zest, baking powder and salt. In another bowl combine the yogurt and vanilla extract.
  4. Fold in the dry ingredients in the egg containing large bowl alternating with vanilla yogurt. Starting and ending with the addition of the dry ingredients.
  5. Spoon this batter over the pears and smooth level. Bake the cake until nicely browned and a cake tester inserted into the center comes out clean, this takes about 40 to 45 minutes.
  6. Cool the cake for a few minutes and invert the cake tin on the serving plate. Remove before serving and add more walnuts on top. Best enjoyed both warm and cool. Dust with castor sugar.
