Ingredients Serving: 10

  1. For pistaschio sponge
  2. Flour 1 cup
  3. Powdered sugar 1 cup
  4. Butter 2 tablespoon + 3 tablespoon oil
  5. Few drops of pista color
  6. Toasted and grounded pistaschio 1/2 cup
  7. Green cardamom powder 1/2 teaspoon
  8. Baking powder 1 teaspoon
  9. Baking soda 1/2 teaspoon
  10. Milk required to bring the batter in pouring consistency
  11. For Rasmalai
  12. Full cream milk 1 cup
  13. Juice of one lemon
  14. For sugar syrup
  15. Sugar 1 cup
  16. Water 2 cup
  17. For Rasmalai milk
  18. Full cream milk 1 cup
  19. Sugar 1/2 cup
  20. Few saffron strands
  21. Pinch of cardamom powder
  22. For frosting
  23. Whipped cream 2 cup
  24. For garnishing
  25. Chopped pistachio

Instructions

  1. For pistaschio sponge
  2. Sieve Maida baking powder, baking soda pistachios powder and cardomon powder and keep it aside.
  3. Beat sugar,oil and butter . To this add maida.mixture and.make batter with milk.
  4. Add pista color
  5. Pour the batter in round greased tin .
  6. Bake in a preheated oven at 180 degree for 40 minutes or till skewer comes out clean
  7. Let the cake cool down
  8. For Rasmalai
  9. In a sauce pan heat milk .when milk comes to boiling point switch off the flame . To this add lemon juice and Let the whey seperate
  10. Strain it through a muslin cloth.
  11. Wash it under running water to remove lemon odour
  12. When water completely drips off put Chena on work top
  13. Mash it with palms of hand to make it smooth mixture.
  14. Make small tikki out of it.
  15. For sugar syrup
  16. Heat sugar and water in a sauce pan
  17. When it starts boiling add Chena tikki to it . Cook for some time till it floats on top.
  18. Strain sponge and keep it aside
  19. For Rasmalai milk
  20. Heat milk .
  21. Add saffron strands, sugar, elaichi powder. Cook till it becomes half.
  22. Add cooked sponge to milk and cook.
  23. Switch off the flame and let it cool down
  24. For cake frosting
  25. Cut cake in layers
  26. Put bottom layer on cake board . milk of
