Mexican style refried beans that are great as a filling for tacos.

Frijoles Refritos

Ingredients to make Frijoles Refritos

  • 400gms Dried Pinto beans(chitri wale rajma in India)
  • 2 tbsp olive oil
  • 2 medium sized onions, chopped
  • 5 cloves of Garlic, minced
  • 1 tbsp chilli powder
  • Salt and freshly ground Black pepper
  • 1 tbsp Fresh coriander/parsley

How to make Frijoles Refritos

  1. In a large pot, bring the beans to a boil with 8 cups of water. Simmer and cook over low heat for 2 hours or till done. Alternately you can presoak and pressure cook the beans if in a hurry.
  2. Heat oil in a pan and add onion and garlic, fry till translucent. Add Chilli powder, salt and pepper.
  3. Add in the boiled beans, mashing down well with a ladle.
  4. Garnish with some coriander/parsley and serve.
