How To Make Margarita Cupcakes

Super-delicious, fun, lemony, and buttery at the same time..with the taste of tequila in every bite!

Ingredients to make Margarita Cupcakes

  • 200gms Plain Flour
  • 200gms Sugar, powdered
  • 100gms Unsalted Butter, softened
  • 2 tsp baking powder
  • 2 Eggs
  • A pinch of salt
  • 2 tbsp Tequila
  • 1/2 cup Buttermilk
  • Juice and zest of 2 Limes
  • 1/2 tsp Vanilla extract
  • For the frosting-
  • 1 cup Cream
  • 1/2 cup Unsalted Butter, softened
  • 2 tbsp Cream Cheese
  • 1 cup Icing Sugar(add more if you like it sweeter)
  • 1 tbsp Lime juice
  • 2 tbsp Tequila
  • Lime wedges, sea salt and extra zest for garnishing

Steps to make Margarita Cupcakes

  1. Preheat oven to 180 deg. C.Line muffin tray with liners and keep aside.
  2. Beat the sugar and butter together till fluffy.
  3. Beat in the eggs.
  4. Sieve flour with the baking powder and salt and keep aside.
  5. Add in the zest, lemon juice, vanilla and tequila to the butter-egg mixture, beat well.
  6. Now add in the flour and buttermilk, beat the mixture at low speed till smooth and creamy.
  7. Spoon onto muffin liners and bake for 20-30 minutes till golden.
  8. Let cool completely before frosting.
  9. For the frosting- Whip the cream with the sugar till soft peaks form, now slowly add in the soft butter, cream cheese, tequila and lemon juice. Whip till stiff peaks form. Taste and adjust sugar.
  10. Frost cupcakes and garnish with lime zest and a sprinkling of salt and a lime wedge.
