ABOUT Scallion Cheesy Tarts RECIPE

Small tarts with scallions and cheese making it apt to served as an appetiser or for light lunch.

Ingredients Serving: 12

  1. Pastry Dough
  2. All purpose flour 1 3/4 Cups
  3. All purpose flour for dusting1 tablespoon
  4. Butter 110 grams
  5. Egg yolk 1
  6. For Filling
  7. Ricotta cheese 1 cup
  8. Grated Pecorino Cheese 1 Cup
  9. Egg 1
  10. Diced Green Bell peppers 2 tablespoon
  11. Pepper powder 1/2 teaspoon

Instructions

  1. In a bowl add the flour and butter and rub in with the fingertips till it looks like bread crumbs.
  2. Add egg yolk and enough cold water to form a smooth dough. Cover and chill in fridge for 30 minutes.
  3. Preheat oven to 180 degree centigrade. Lightly grease a non-stick 12 cup muffin pan.
  4. Roll out the dough to 1/2 inch thick and with a round cutter cut into circles large enough to line the cups in the muffin tray.
  5. Gently press the circle dough to form a shell in the cups and fill with pie weights or dried beans.
  6. Bake the pastry shells for 10 minutes,and wait till it cools down.
  7. Beat the egg and mix in ricotta cheese, pecorino cheese, scallions and bell peppers . Season with salt and pepper.
  8. Scoop the filling into the pastry shells and bake for 10 minutes. Serve warm.
