ABOUT Pan fried tofu & Stir fried bean sprouts RECIPE

Living in Singapore for almost a decade "Hainese chicken rice" is a family favorite. Never tried cooking the dish at home as it is easily available all over the place. Inspired by the dish and following a basic idea from my Chinese neighbor, I tried to cook a vegetarian version of this dish and the result was simple yet a flavorful meal. My vegetarian version of a "Roasted chicken rice".

Ingredients Serving: 2

  1. Rice : 1 and 1/2 cup ( I used basmati rice. You can use Jasmine rice instead)
  2. For Pan fried tofu : Chinese tofu - 300 gms
  3. Oil - 3 tsp
  4. Garlic - 2-3 cloves chopped
  5. Spring onions - 2-3, white portion chopped, greens sliced long
  6. Water - 6 tbsp
  7. Oyster sauce - 2 tbsp ( I used vegetarian oyster sauce)
  8. Dark soy sauce - 1/2 tsp
  9. Corn flour - 1 tsp
  10. Salt - as per taste
  11. Black Pepper powder - as per taste
  12. For bean sprouts : Bean sprouts - 320 gms
  13. Carrot - 1/2, finely sliced
  14. Spring onion greens - 2 sliced long
  15. Garlic - 2 cloves, chopped finely
  16. Oil - 1 tsp
  17. Salt as per taste
  18. Pepper powder as per taste
  19. Dark soya sauce - 1/2 tsp

Instructions

  1. Rice : Steam and cook the rice with salt as per taste. Keep this warm on the side until it is time to serve.
  2. For the Pan fried tofu : Spread a layer of 3-4 kitchen paper towels and drain the tofu over it. Cover it with another layer of 3-4 kitchen paper towels and press it very gently to squeeze the extra water out.
  3. Cut the tofu in medium sized pieces and sprinkle with salt generously.
  4. Heat a non stick pan. Once the pan is hot, pour 1 tsp of oil and swirl it nicely to coat the pan. Place the tofu pieces gently and cook on a low-medium heat turning them only once.
  5. Note that the tofu pieces will tend to stick to the pan initially but once cooked it can be flipped easily and tossed around. Cook in batches as required, drain the tofu pieces on a kitchen paper towel and keep aside.
  6. In a bowl, mix water and corn flour. Add black pepper powder, oyster sauce, dark soy sauce and mix well. If required, you can add salt according to taste but remember that tofu is seasoned with salt as well.
  7. Heat 1 tsp oil in a pan, saute the garlic until raw smell disappears. Add spring onions and fry until they turn translucent. Add sauce and corn flour into the pan and mix well. Simmer and cook till the sauce thickens slightly.
  8. Add pan fried tofu pieces and let them coat in the sauce evenly. Then add the sliced spring onion greens and turn off the flame immediately.
  9. For the bean sprouts : Heat oil in a pan. Saute the garlic until raw smell disappears. Add sliced carrots and stir fry for 30 seconds.
  10. Add bean sprouts, sprinkle salt, pepper, soy sauce and stir fry on a high heat until cooked. Bean sprouts should not be cooked too much and should be slightly crunchy.
  11. Add sliced spring onion greens and turn off the flame immediately.
  12. Serve it hot.
