Here I have re-created my all-time favorite appetizer from one of the best restaurants of my home-town Indore- Amar-vilas. Growing up, this was my absolute "go-to dish" whenever we dined at this fabulous hotel! These veggie lollipops fry very easily and once they are served drenched in that yummylicious hot & sweet sauce, trust me it's a combination truly made in food heaven! Give it a go friends as this will be one of the best starter/appetizer/party recipe that you'd have discovered in a long time!

Ingredients Serving: 2

  1. Large carrot, grated 1
  2. Cabbage, grated 1 cup
  3. Spring onion greens, finely chopped 1/4 cup
  4. Soy sauce for the lollipop mix + 2 tsp soy sauce for the sauce 1 teaspoon
  5. Chilli sauce 1 teaspoon
  6. All-purpose flour 2 tablespoon
  7. Cornflour 1 tablespoon
  8. Ginger-garlic paste 1/2 teaspoon
  9. Garlic cloves, finely chopped 2
  10. Dried red chillies 4-5
  11. Tomato paste/puree 2-3 tablespoon
  12. An one inch piece of ginger, peeled and grated
  13. Sugar 2 teaspoon
  14. Vinegar 1 teaspoon
  15. Tomato ketchup 3 tablespoon
  16. Sweet chilly sauce 2 tablespoon
  17. Sesame oil (optional)1 tablespoon
  18. Some soup-sticks
  19. Some more chopped spring-onion greens for garnishing
  20. Oil for sauce + Oil for deep frying the lollipops 2 tablespoon
  21. Salt and Pepper to taste

Instructions

  1. Let’s make the yummy hot & sweet sauce first! De-seed the dry red chillies and then, soak them in ½ cup water, for around an hour. Blend along with the water you had soaked it in and set aside.
  2. Heat 2 tbsn vegetable oil + sesame oil in the wok.
  3. Add the garlic & ginger in hot oil and fry for about 10 seconds. You do not have to brown them.
  4. Add the blended red chilly paste and fry for 1-2 minutes.
  5. Add your tomato paste/puree and fry again, till you see the oil leaving the edges.
  6. As the sauce simmers, add the tomato ketchup, soy sauce, sweet-chilly sauce, vinegar, salt, pepper and sugar. Cook for around 6-7 mins more on low flame till you again see the oil leaving sides. The resulting sauce should be nice and thick!
  7. Check and adjust salt and sugar as per your preference. Your yummy sauce for the veggie lollipops is ready!
  8. Let us make the lollipops now. In a bowl, combine the grated carrot, cabbage and spring onion greens.
  9. Transfer the mixture into a clean muslin cloth and squeeze the veggies very well. This is so that the veggies releases almost all their water, otherwise the lollipops won’t hold. Transfer the veggies back into the bowl.
  10. To the dried vegetables, now add soy sauce, chilli sauce, ginger-garlic paste, black pepper powder and a little salt.
  11. Next, add all-purpose flour and cornflour.
  12. Make a nice thick dough without adding any water. It should all combine very easily.
  13. Now comes the most important part- making the lollipops. Divide the prepared mixture equally and shape into balls. Put a ball on top of each soup-stick and adjust to make a lollipop.
  14. Deep fry the lollipops on medium flame till they turn golden brown.
  15. Place on a kitchen towel to remove excess oil.
  16. Ladle generous amounts of hot & sweet sauce on top of your lollipops, garnish with spring onion greens and serve hot immediately! Ladle your sauce on the lollipops right before serving and not earlier than that. Enjoy!
