What do I say about the taste of this soup! Your mind fights to identify a distinct taste, is it the sweetness of the carrots? or the tanginess of the orange? Wait! it is the sharpness of the ginger. I quite liked this eclectic mix of taste in this Carrot Soup with Ginger and Orange, and hope you do too.

Ingredients Serving: 4

  1. Carrots – 1 Kg
  2. Orange Juice – 1 Cup
  3. Grated Ginger – 1 tbsp
  4. Pepper Powder to Taste (Optional)
  5. Salt to taste
  6. Water

Instructions

  1. Boil 3 Cups of water.
  2. Peel and chop the carrots into 1″ cubes.
  3. Add the carrot cubes into the boiling water.
  4. Cover and cook till the carrots are tender. This takes about 15 minutes. Add more water, if required.
  5. Turn off the heat and add ginger into the cooked carrots.
  6. Cover and set aside to cool.
  7. Blend the the cooled carrots and ginger into a smooth liquid.
  8. Add the orange juice into the blended carrot. Add salt and water, if required.
  9. Bring the soup to a boil.
  10. Serve warm or chilled with a dash of pepper.
