This pickle is very easy and quick to make. You can make with the ingredients which you have in the house

Ingredients Serving: 6

  1. 3 carrots
  2. 1 long red bell pepper
  3. 7 green chillies
  4. 1/4 cup of pickle masala
  5. 1/2 cup of jaggery/gud
  6. 2 tbsp of olive oil
  7. Salt to taste

Instructions

  1. Peel carrots and wash them, dry them with paper towel
  2. Wash the bell pepper and dry it with paper towel. Remove stem and seeds of bell pepper and keep aside
  3. Slice red pepper and carrots into thin slices and add them to a bowl
  4. Wash the green chillies and dry them with paper towel. Remove stems of chillies and cut them into 2 and remove the seeds of them.
  5. Add them to bowl of carrots and bell pepper
  6. Add 1/4 cup of dry pickle masala and 2 tbsp of olive oil to carrots bowl and mix properly
  7. Add 1/2 cup of jaggery to carrot bowl and mix properly
  8. Add pickle in the bowl and cover with lid
  9. Keep in the fridge. It will take 3 days for jaggery to dissolve. You can have it after three days with Paratha or Puri
