Cream of Carrot Soup with Apple

Ingredients to make Cream of Carrot Soup with Apple

  • carrots- 3
  • onion- 1 small sized
  • garlic- 3 cloves
  • potato- 1 small sized
  • Vegetable broth- 300 ml
  • Milk- 1 cup
  • Dry thyme- 1/2 tsp
  • salt to taste
  • spinach- 4 to 5 leaves, chopped
  • apple- 1, chopped
  • pepper powder- 1/2 tsp
  • A dash of nutmeg powder
  • olive oil- 1 tbsp

How to make Cream of Carrot Soup with Apple

  1. Wash the carrots and cut them into small cubes. Also peel the potato and cut it into small cubes. Cut the onion into thin slices then peel and chop the garlic.
  2. Heat olive oil in a saucepan, add the chopped garlic, onion and stir for a few seconds. Then add the potato and carrot cubes followed by thyme, give it a good stir. Pour in the broth and bring it to a full boil. Now, reduce the flame, cover and cook on a low flame for 10 minutes. After this time period, remove it from the heat and allow it to cool.
  3. Blend the carrot mixture in a blender till its smooth. Then bring back this carrot pulp to the saucepan, add milk, chopped spinach and bring it to a full boil. Reduce the flame and boil it for 5 minutes, keep stirring continuously.
  4. Remove it from the heat, add salt, pepper powder, nutmeg, apple chunks. Mix well and serve it hot.
