ABOUT Kaju Rice(Cashewnut Rice) RECIPE

An absolutely delish rice recipe that can never let you down on any festive occasion. It is a must try one for your family and guests. This is my way of doing it and trust me guys, it is such a simpler one that even a novice can cook easily. Happy Festive Season !!!!!!!

Ingredients Serving: 6

  1. Raw rice 4 cups
  2. cashewnuts 200 gm
  3. salt to taste
  4. saffron strands soaked in 1/4 th cup milk
  5. Caraway seeds 1 tsp
  6. cinnamon sticks 4 to 5
  7. cardamom pods 5
  8. cloves 7
  9. Bay leaves 3
  10. onions sliced and fried large 3
  11. coriander leaves finely chopped a handful
  12. Green chillies slit 4 to 5
  13. ghee 3 tbsp
  14. ginger Garlic paste 2 tbsp
  15. Garam masala powder 1 tsp


  1. Soak rice for about 20 minutes.
  2. Cook it al dente (about 90 to 95% cooked but grains should be firm) adding some salt or skipping it if does not prefer it.
  3. Drain and set aside.
  4. Deep fry the onions and keep aside.
  5. In a pot, heat ghee and add the ginger garlic paste.
  6. Saute it for a while before adding the whole spices.
  7. Now add the cashewnut halves to it.
  8. Shallow fry all these on a low flame.
  9. Finally add the green chillies and the garam masala powder.
  10. Now add the cooked rice at the bottom of a large vessel and top it up with the cashewnut mix, fried onions and the saffron milk.
  11. Garnish with chopped coriander.
  12. Now close the lid and allow it to simmer for about 15 minutes on a low flame.
  13. Serve it hot after mixing it up well with any gravy type side dish.

Can we use butter in the place of ghee?
