ABOUT Cheese Souffle RECIPE

Light, airy and so cheesy..these souffles are the easiest to put together.

Ingredients Serving: 4

  1. 1 Cup Cheddar Cheese, grated
  2. 8 tbsp Butter
  3. 8 Egg Whites
  4. 4 egg yolks
  5. 1cup Milk
  6. 4 tbsp Flour
  7. 4 tbsp Grated Parmesan Cheese
  8. 1/2 tsp Mustard powder
  9. Freshly cracked pepper- 1/4 tsp
  10. Salt according to taste

Instructions

  1. Grease ramekins (small white bowls) with a little softened butter and sprinkle the parmesan cheese. Preheat oven to 200 deg C.
  2. Melt the remaining butter in a heavy pan and add in the flour. Stir and cook over low heat till the rawness of the flour disappears. Whisk in the Milk and season with the salt, pepper and mustard powder.Lastly whisk in the egg yolks.
  3. In a separate spotlessly clean bowl whip egg whites till soft peaks form.
  4. Lightly fold in the whipped whites and Cheddar cheese into the butter-egg yolk mixture. Do not overdo it, just fold in with a light hand.
  5. Fill ramekins half way and bake the souffle for about 20 minutes or till well risen and golden brown on top.
