Ingredients Serving: 6

  1. 1 litre of plain/full fat milk
  2. 1 tbsp cardamom powder
  3. 2 tbsp of sugar
  4. 2 tbsp ghee
  5. 100 gms condensed milk
  6. Juice of 1 lemon
  7. Finely chopped dry fruits like almonds and pistachios

Instructions

  1. Bring milk to boil on full/high heat in a vessel
  2. Lower the heat once the milk is boiled and add the lemon juice now
  3. Keep stirring the milk til it curdles and switch off the stove and set aside
  4. Using a Muslin cloth strain the water in the vessel and collect the chaana/paneer obtained in the cloth
  5. Get the chaana completely dry by squeezing out the excess water while in the cloth still. place the fresh chaana in a bowl
  6. In a non stick pan, add 2 tbsp of ghee and melt it over medium heat
  7. Add the chaana now and combine well with the ghee. Sauté for about 2 minutes
  8. Next add the sugar, condensed milk, cardamom and mix well over Low heat
  9. Keep stirring till the mixture comes together to form a lump
  10. Switch off the stove and place the mixture on a greased plate or a box and gently spread it in
  11. Drizzle the chopped dry fruits of your choice and gently press them on the mixture
  12. Let cool and cut into desired shape to make the sondesh
