Blueberry Clafoutis

Ingredients to make Blueberry Clafoutis

  • 85 grams all-purpose flour
  • Vanilla ice cream to serve alongside
  • A pinch of sea salt
  • 3 eggs
  • 1/4 teaspoon lemon zest (optional)
  • 1 teaspoon vanilla extract
  • 115 grams sugar plus 2 tablespoons extra
  • 1 cup of blueberries
  • 125 ml heavy cream
  • 250 ml whole milk
  • Powdered sugar to sprinkle on top

How to make Blueberry Clafoutis

  1. Preheat the oven to 190°C.
  2. Take a bowl, add in the following ingredients, flour, milk, cream, sugar, eggs, vanilla, and salt together. Whisk well till this batter is smooth.
  3. Place four medium sized ramekins on a baking sheet.
  4. Start by spreading a layer of berries in the bottom of each ramekin, then fill it 3/4 full with the batter.
  5. Bake these until they turn golden brown in colour for 45 minutes.
  6. Once cooked, let them cool for 5 minutes before serving.
  7. Sprinkle powdered sugar on top to garnish and serve alongside vanilla ice cream.
