I love fusion food. It's the best of two worlds combined palate. This soup is refreshing, mouth watering and fulfilling.

Gazpacho - South Indian style

Ingredients to make Gazpacho - South Indian style

  • 2 small tomatoes
  • salt to taste
  • 1 slice of White bread
  • 2 tablespoon lemon juice
  • 5 garlic cloves
  • 1/2 cup coconut paste
  • 1/4 cup olive oil
  • 1 large Bell pepper
  • 1 large organic cucumber
  • For Garnishing:
  • Chopped onions
  • Croutons as per choice
  • Sliced baby tomato
  • Sliced baby cucumber

How to make Gazpacho - South Indian style

  1. Dampen the bread a little. Process the bread with tomato, cucumber, garlic and 1 cup chilled water.
  2. Add de-seeded bell pepper, olive oil, lemon juice and coconut paste and blend into a smooth paste. Add salt to taste.
  3. Strain the soup and chill for half an hour. Garnish with chopped onions, croutons, sliced baby tomato and cucumber.
  4. Serve chilled

My Tip:

Gazpacho is great way to add vegetables to your meal. Add as many vegetables you want. Add wine vinegar instead of lemon juice and chili flakes for an extra kick.
