ABOUT Raw Papaya layered karanji RECIPE

These layered cute cresent shape karanji are very healty , and good in taste.perfectly going with this festival of lights . Here i use raw papaya for stuffing instead mava or khoya . Taste is really awesome because it has crispy outside spiral puff and soft mouthmelting stuffing inside .

Ingredients Serving: 10

  1. For spiral puff
  2. 2 cup all purpose flour
  3. 1/2cup sooji
  4. 1/2cup hot oil
  5. 1/2cup milk
  6. For uncooked paste
  7. 5 table spoon corn flour
  8. 2 table spoon clarified ghee
  9. For stuffing
  10. 2 teaspoon clarified butter /ghee
  11. 100 gm raw peeled and grated papaya
  12. 1/4cup sooji
  13. 1/4cup poppy seeds
  14. 1/4cup decicated coconut
  15. 1cup grounded sugar
  16. 1tea spoon cardmom powder
  17. 2 table spoon chopped dryfruit
  18. Oil or ghee to fry karanji

Instructions

  1. Mix clarified butter (ghee)and cornflour in a bowl mix well for 5 minutes to make a smooth and fluffy paste.Set aside.
  2. Mix all purpose flour ,sooji ,oil in a big deep bowl .
  3. Add little little milk in it and make a smooth dough with it .Set aside for 30 minutes.
  4. Take a wok add sooji in it and dry roast sooji on medium flame .Take out it in a plate .
  5. Now add poppy seeds in same wok and dry roast it too on medium flame.take out it and add it in sooji.
  6. Now add 2 teaspoon of clarified ghee in same wok and add grated papaya in it . Roast papaya till all water evaporate.
  7. Now take a big vessel add all stuffing material in it like sooji ,poppyseed ,dry papaya , desicated coconut ,grounded sugar , chopped dryfuits ,and cardamom powder .And mix well.set aside to cool down properly
  8. Now take out aata dough and make 7 equal balls of it .
  9. Now roll all 7chapati .Keep aside
  10. Now take a chapati apply uncooked paste on chapati and place another chapati on it .Now apply uncooked paste on second chapati and cover it with another third chapati .
  11. Like this make a deck of 7 chapati .And roll them with light hands .
  12. Now fold chapati deck very tightly like a mat .
  13. Now cut this roll in 1 inch pieces .
  14. Take one piece and roll it with rolling pin like small poori .
  15. Now add papaya stuffing to the poori .
  16. And make gujhiya like shape with it .
  17. Make all spiral puffs like this .
  18. And deep fried in hot oil on medium heat .Till golden.
  19. Drain out on kitchen towel to absorb extra oil .
  20. Now your papaya dryfruit spiral puffs / layered karanji are ready to eat .

Can we use butter in the place of ghee?
