Cream of Tomato with Spinach and Pasta

Ingredients to make Cream of Tomato with Spinach and Pasta

  • 8 medium ripened Tomatoes
  • 1/2 cup boiled Tortellini
  • 1/2 cup roughly chopped Spinach
  • 2 tablespoon chopped Basil
  • 1/2 cup fresh Cream
  • 1 teaspoon Cumin seeds
  • 1 inch crushed Ginger
  • Salt to taste
  • To Garnish:
  • Sun dried tomatoes
  • Freshly ground Black Pepper

How to make Cream of Tomato with Spinach and Pasta

  1. Pressure cook the tomatoes to one whistle. Blanch them and process the pulp into a smooth paste.
  2. Heat a teaspoon of oil into a large wok. Add cumin, ginger, spinach and basil leaves.
  3. Saute for a minute and then add the tomato puree.
  4. Add 2 cups of water and let it simmer on low heat for 5-6 minutes
  5. Now add tortellini, cream and simmer for another minute.
  6. Once thick and creamy add salt. Garnish with sun dried tomatoes and pepper.
  7. Serve hot.
My Tip: Add a tablespoon of corn starch if the soup is not getting a thick consistency.
