ABOUT Kuzhi Paniyaram RECIPE

Paniyaram is a snack item which can be prepared very quickly. It can be eaten as a light breakfast or dinner also. Kids will love this as it has got a crispy crust and a soft inner.

Ingredients Serving: 3

  1. Raw rice - 1 cup
  2. Boiled rice - 1 cup
  3. Urid dhal - 3 tablespoon
  4. Leftover rice - 4 tablespoon
  5. Poha - 2 tablespoon
  6. Chopped Shallots - handful
  7. Grated carrot - 1
  8. Green chillies - 2
  9. Curry leaves - finely chopped
  10. Mustard seeds - 1 spoon
  11. Salt - to taste
  12. Kadalai paruppu - 1 spn

Instructions

  1. Grind raw rice, boiled rice, Leftover rice, poha and make a batter which is of dosa batter consistency.
  2. Heat a pan, add oil. When hot add mustard , Bengal gram, shallots, green chillies, curry leaves , grated carrot
  3. Saute till the onions turn translucent . Let it cool. Add the mixture to the batter.
  4. Heat a paniyaram pan. Add 2 drops ghee in each mould and pour a spoonful of batter into each hole.
  5. Keep the heat on medium. After the edges turn golden brown and crisp, flip the paniyaram to the other side and let it cook for a minute
  6. Remove from pan, serve hot with Chutney or sauce
