ABOUT Pan fried Haandvo RECIPE

This is a traditional Gujarati recipe and a complete meal in itself as it is made from rice,lentils and vegetables.It is crispy from out and soft and crumbly from inside.There are various ways to prepare Handvo-in a special handvo cooker,in a nonstick pan or in oven.

Ingredients Serving: 4

  1. Rice-1 cup
  2. Toor dal-1/4 cup
  3. Urad dal-1/4 cup
  4. Chana daal-1/4 cup
  5. Curd-2 tbsp
  6. Garlic-10 cloves
  7. Ginger-1 inch
  8. Green chilli-2
  9. Bottlegourd-1 & 1/2 cup
  10. Carrot-1/2 cup
  11. Salt
  12. Red chilli powder-1 tsp
  13. Turmeric powder-1/2 tsp
  14. Garam masala-1/2 tsp
  15. Asafoetida-1/4 tsp
  16. Fresh coriander-2 tbsp
  17. Soda-1/4 tsp
  18. For tempering-
  19. Oil-2 tbsp
  20. Mustard seeds-1 tsp
  21. Sesame seeds-1 tsp
  22. Red chillies-2

Instructions

  1. Wash and soak rice and dals for 4 to 5 hours.
  2. Drain out all water and grind everything along with curd.
  3. Cover this batter and keep to ferment for 8 hours.
  4. After 8 hours batter will not puff up like idli or dosa batter but when you mix with spoon you will see bubbles.
  5. Now grate bottle gourd and carrots.
  6. Mix it in batter.Add ginger,chilli and garlic paste.Add dry masala and salt also.
  7. Mix everything.Add coriander.
  8. Now take a nonstick pan and add 2 tbsp oil.
  9. Add mustard seeds,sesame seeds and red chillies to hot oil.
  10. Now add soda and one spoon of this tempering to the batter.
  11. Mix and pour this batter immediately into the pan with tempering.Level it.
  12. Cover and cook for 10 to 12 minutes on medium low flame.You will see that upper side is cooked like the picture below.
  13. Now take a big plate and hold it over the pan .Invert to remove handvo upside down.See how nicely the lower side has browned.
  14. Now slide this onto the pan so that other side also becomes golden and crisp.
  15. Cover and cook again for 10 minutes on slow flame.Check with a toothpick whether it is cooked.When cooked remove on a plate by inverting.
  16. Now cut with a pizza cutter or knife and serve hot with ketchup,green chutney and buttermilk.
