Red lentil and Carrot soup

Ingredients to make Red lentil and Carrot soup

  • Red lentil/ lal masoor ki dal soaked 1 cup
  • Carrot roughly chopped 1 cup
  • Tomato roughly chopped 1/2 cup
  • Salt to taste
  • Black pepper powder to taste
  • Cinnamon 1/2 stick
  • Cloves 2
  • Lemon juice as required or 1 tbsp
  • Butter 1 tbsp
  • Onion roughly chopped 1 medium
  • Garlic cloves crushed 1 tbsp
  • Ginger 1 inch piece
  • Fresh cream for garnishing
  • Coriander leaves for garnishing

How to make Red lentil and Carrot soup

  1. Heat the butter in pressure cooker, add lentil, carrot, garlic, onion, ginger, black pepper, salt, cinnamon, cloves and tomatoes.
  2. Cover and cook under pressure till 2-3 whistles.
  3. Turn off the gas, cool and put into a mixer jar and grind till smooth (discard the cinnamon and cloves before grinding).
  4. Transfer the mixture back into the pressure cooker, you can use another pan too.
  5. Bring it to a boil, add lemon juice and mix well. Boil for 2-3 minutes more.
  6. Pour into serving bowls, garnish with coriander leaves and fresh cream.
  7. Serve hot.
