Ingredients to make Pumpkin Soup

  • 350 grams Pumpkin- washed, peeled and diced 350 grams
  • 1 big sized Onion, peeled and chopped
  • 2 pieces of Bay Leaves
  • 1 cup of yellow moong daal, washed and soaked for 1/2 hour
  • Salt as per taste
  • Pepper as per taste
  • Italian seasoning as per taste
  • Handful of basil leaves
  • A dollop of fresh cream (Optional)
  • 1/2 cup Milk

How to make Pumpkin Soup

  1. Take a pressure cooker, add in onions, pumpkin chunks, dal, water and cook with salt and pepper.
  2. Let it cook for two whistles, after this turn off the stove and let it rest for a while. Once cooled, blend this mixture into a puree.
  3. The consistency will be like a thick soup, but you can adjust the consistency as per your desire. Add the Italian seasoning with a handful of basil and bring it to boil.
  4. Then pour in 1/2 cup of Milk and let it boil for another few minutes.
  5. Pour the soup into a bowl and add a dollop of fresh cream just before serving.
