Broccoli Soup

Ingredients to make Broccoli Soup

  • Broccoli : 1 Big Floret, washed and drained, then cut into small pieces
  • Potato : 1 Medium Sized, washed, drained and diced
  • Salt and pepper to taste
  • Bay Leaf : 1 Leaf ( Optional )
  • Onion : 1 Medium Sized, roughly diced
  • Milk : 1 Cup
  • Cream 2 tbsp
  • Water : 2 cups

How to make Broccoli Soup

  1. In a pressure cooker, add a little oil, then put in the onions and potato. Saute the vegetables for a few minutes till the onions are translucent.
  2. Saute the broccoli in the same cooker. Add 2 cups of water, seasoning and let it pressure cook till 2 whistles so that the potatoes are cooked and they merge with the broccoli. Let this rest for some time.
  3. Check the consistency. Blend it if you like it smooth. I prefer it coarser. Adjust the seasoning as per taste.
  4. Pour in milk and bring it to boil. The milk will add a creamy texture to this dish.
  5. Serve it piping hot.

My Tip:

I prefer potatoes in this soup as they add a thick texture.
