ABOUT Motichanna (Spiced Gram Flour Sticks) RECIPE

Motichanna is a fried spicy snack served at teatime or as accompaniment with dinner or lunch

Ingredients Serving: 8

  1. 2 cups gram flour
  2. 2 tbsp green chillies crushed or red chilli powder
  3. A pinch of hing
  4. 2 tbsp oil for dough
  5. Salt to taste
  6. 1 1/2 cup water
  7. 1/2 tbsp ajwain seeds
  8. Oil for frying

Instructions

  1. In a broad vessel mix gram flour green chillies crushed for Green chillies Motichanna or red chilli powder for red chilli Motichanna , salt , ajwain and hing
  2. Add oil and water to make a sticky dough.The dough should have a paste like consistency.
  3. In a kadhai heat the oil for frying on a medium flame. Place a perforated spoon on the Kadhai .Put some dough on the spoon and press it so that the batter falls into the oil forming small straight sticks Motichanna.
  4. Repeat the process till the batter is finished.Deep fry the Motichanna till crisp n light brown in colour.
  5. Remove the Motichanna on an absorbent paper to drain out excess oil.Allow to cool down before storing in an air tight container.
