Ingredients Serving: 4

  1. 1 tbsp oil
  2. 1 chicken breast boiled and shredded
  3. 2 inch piece ginger, cut in julienne or finely chopped
  4. 3 cloves of garlic
  5. 1 carrot, shredded
  6. 1 cup cabbage, shredded
  7. 1 capsicum, shredded
  8. 2 tbsp Soya sauce
  9. 3 sprigs of spring onion
  10. 3 green chillies, finely chopped
  11. 1/2 tbsp sugar
  12. 1/2 tbsp black pepper powder, or as per taste
  13. Salt as per taste
  14. 3 cups of chicken stock
  15. Fried noodles to garnish
  16. 2 Eggs
  17. 2 tbsp corn flour
  18. 2 tbsp Vinegar

Instructions

  1. Wash, clean and cut the chicken breast. Take a wok, add in the chicken along with 4 cups of water, salt and black pepper. Cook till this chicken is tender, then turn off the gas. Once cooled, strain it and preserve the stock and shred the chicken.
  2. Take a wok add in the oil, when hot add in the garlic and saute for a minute then add in ginger and saute for another minute.
  3. Add in the carrot and stir fry on high flame, then add in capsicum and saute. Next add cabbage and whites of spring onion and saute. Pour in chicken stock, shredded chicken, soya sauce, vinegar, salt, sugar and green chilies. Bring it to a boil.
  4. Mix the egg well and pour it slowly, once the soup starts to boil, add in the corn flour slurry and bring it to a boil again.
  5. Turn off the gas, add in the greens of the spring onion. Mix and pour in a bowl. Garnish with fried noodles and enjoy it on a winter day.
