ABOUT KARIPAP (Malaysian style curry pufff) RECIPE

These vegetarian Karipap with curries potato filling are a popular Malaysian snack .Like all popular food they come in different versions.The crust or pastry comes in different forms.This version comes with a smooth Flaky crust. I tried these puffs two year back when we went to Malaysia for family holiday .Usually curry puffs are deep fried and all purpose flour is used for making crust.I tried both air-fried and deep-fried method to cook these puffs.For making crust i used atta and maida both .

Ingredients Serving: 6

  1. Ingredients for filling:
  2. Boiled potatoes 3 No medium size.
  3. Sweet potato cooked 1 No small size
  4. Onion chopped 1No medium size
  5. Curry powder/Garam masala 3Tbsp
  6. Water 1/4cup
  7. chopped coriander 1/4 cup
  8. Salt to taste
  9. Ingredients for crust:
  10. Whole wheat flour/Atta 1Cup
  11. All purpose flour/Maid 1Cup
  12. Salt 1/2 tsp
  13. Margarine/Butter 1/2cup
  14. Cold water 1/2 Cup
  15. Oil for Deep frying

Instructions

  1. Steps for making filling:
  2. Boil potatoes and sweet potatoes.
  3. Peel potatoes and cut into small cubes.
  4. Heat oil in a pan .Saute onion until it change its colour.
  5. Add curry powder and continue to cook for few seconds.
  6. Add cubed potatoes and sweet potatoes.
  7. Stir to coat potatoes with spices.
  8. Pour in water and add salt.
  9. Add chopped coriander and continue to stir to get everything well mixed.
  10. Turn off the gas and allow filling to cool.
  11. Steps for making crust:
  12. Combine atta , maida ,salt and margarine in a large bowl.
  13. Mix everything with hands.
  14. Slowly add water at a time while kneading a dough.
  15. Knead to form a soft,smooth dough.
  16. Cover with a kitchen towel and allow dough to rest for 15 minutes.
  17. Preparing the karipap:
  18. Take a small lemon sized ball from the dough.
  19. Roll into thick disc and place in gujiya mold .
  20. Place a Tbsp of filling in the centre and close the mold to seal the edges together.
  21. Same way prepare all the karipap .
  22. For deep frying:
  23. Heat sufficient oil in kadai .
  24. Deep fry on medium heat for until it turns golden brown in colour .
  25. Remove and allow kripap to drain excess oil on tissue paper.
  26. For Air frying:
  27. Preheat airfryer at 180*c for 5 minutes.
  28. Meanwhile brush the karipap with little oil.
  29. Place the kripap in airfryer basket and cook for 15 minutes or until brown in colour.
  30. Turn the sides of kripap while airfrying.
  31. Serve with cup of tea .
