Smoked Carrot and Ginger Vichyssoise

Ingredients to make Smoked Carrot and Ginger Vichyssoise

  • 200 gm carrots
  • Salt to taste
  • 20 gm celery roots
  • 5 gm smoked paprika
  • 20 ml double cream
  • 200 ml veg stock
  • 30 gm butter
  • 10 gm garlic
  • 30 gm onion
  • 25 gm ginger
  • 10 gm orange zest

How to make Smoked Carrot and Ginger Vichyssoise

  1. Peel,wash and slice the carrots.
  2. In a micro proof bowl, place the sliced carrots,ginger,orange zest,onion,garlic,butter,celery roots, half veg stock and smoked paprika.
  3. Put in a oven and micro for 15 mins or till the carrots are tender.
  4. Place the cooked carrot mixture in a stainless steel bowl and coal smoke it for about 10 mins.
  5. Process it to a paste.
  6. Take another microproof bowl pour the remaining veg stock, put in a oven for 5 mins and then add in the smoked carrot paste and adjust the seasoning for salt only.
  7. Finish the soup with double cream and serve.
