Ingredients to make Cold creamy Tomato soup with a twist( orange juice )

  • 1 tbsp olive oil
  • 1/2 cup chopped onions
  • 1 cup chopped carrots
  • 1 tsp chopped garlic
  • 2 cups chopped tomatoes
  • 1/2 cup fresh orangejuice
  • 1 tsp sugar
  • 1 tsp salt(or to taste)
  • 10-2 basil leaves
  • 1 1/2 cup water
  • 1/4 cup cream

How to make Cold creamy Tomato soup with a twist( orange juice )

  1. Heat oil in a deep pan, add the garlic, onions, and carrots in that order, have a gap of a minute before adding each. Fry till the vegetables are soft (15 minutes).
  2. Add the tomatoes, water, orange juice sugar and salt.Bring to a boil.Add the basil leaves. Cover and cook for 15 -20minutes.
  3. Next cool and strain the soup. Keep the stock aside and puree the vegetable. Add to the stock and mix well.
  4. Stir in the cream, adjust the seasoning and transfer the soup to a container and place in the fridge until very cold.
  5. The cold soup should be served in bowls garnished with freshly chopped basil.

My Tip:

This soup can be frozen before adding the cream and used at a later date . I often serve this as a hot soup in winter, tastes as good as the cold one.
