ABOUT Jamnagari ghughra RECIPE

These are savoury ghughras prepared from outer covering of maida and wheat flour and filled with potato and dried green peas stuffing.This is one of the famous street foods of Jamnagar and surrounding areas.It is served with spicy and sweet chutneys.

Ingredients Serving: 4

  1. For outer covering:
  2. Maida-1 cup
  3. Wheat flour-1 cup
  4. Salt
  5. Oil-2 tbsp
  6. Stuffing-
  7. Potatoes-8
  8. Dried peas-1/2 cup
  9. Oil-1 tbsp
  10. Cumin seeds-1 teaspoon
  11. Ginger green chilli paste-1 teaspoon
  12. Turmeric-1/2 tea spoon
  13. Red chilli powder-1 tea spoon
  14. Coriander cumin powder-1 tea spoon
  15. Garam masala-1 tea spoon
  16. Chaat masala-1 tea spoon
  17. Salt
  18. Lemon juice-1 tea spoon
  19. Green coriander-2 tbsp
  20. For serving:-
  21. Red chutney(garlic,red chilli powder,lemon juice)
  22. Green chutney(coriander,green chillies,salt)
  23. Dates and tamarind chutney
  24. Sev
  25. Masala peanuts

Instructions

  1. Soak dried peas for minimum 4 hours.
  2. Cook potatoes and soaked peas in cooker.
  3. Knead a dough from maida,wheat flour,salt,oil and water.
  4. Prepare all chutneys.
  5. Take a pan and heat oil.
  6. Add cumin seeds and ginger chilli paste.
  7. Now add chopped potatoes and peas.
  8. Add all spices,salt and lemon juice.
  9. Sprinkle green coriander.Our stuffing is ready.
  10. Now take small ball from dough and roll out small poori.
  11. Place a spoonful of stuffing and fold into half moon shape.
  12. Now make small pleats on upper margin and form design or can make design with fork also.
  13. Prepare all ghughraa similarly.
  14. Fry all ghughraa in oil at medium slow flame.
  15. Now take ghughraa in a serving plate and make holes in middle of each ghughraa.
  16. Put red chutney,green chutney,date tamarind chutney over these ghughraa.
  17. Sprinkle sev and masala peanuts and serve.
