Broccoli Cheese Soup

Ingredients to make Broccoli Cheese Soup

  • 1 head Broccoli, cut into 1 inch florets.
  • 3 cups Milk
  • 3 tbsp Butter
  • 3 tbsp All purpose flour
  • 4 tbsp Cheese
  • 5 tbsp Cottage cheese
  • 1 Whole onion ( lengthwise chopped)
  • A pinch of nutmeg
  • A pinch of cinnamon
  • Salt and pepper to taste

How to make Broccoli Cheese Soup

  1. Melt the butter in pot over medium heat. Add the onion and cook until softened, about 3 to 4 minutes.
  2. Sprinkle the flour on top. Stir combined and cook until the flour is absorbed and smells lightly toasted about 1 min or so.
  3. Add milk, nutmeg, cinnamon, broccoli, salt and pepper.
  4. Cover the pot and reduce the heat to low until the broccoli is tender.
  5. Now add cheese and allow to melt.
  6. Now mash the broccoli with potato masher and puree completely. Serve hot with very fine chopped cottage cheese.
My Tip: We also add boiled sweet corn.
