ABOUT Crispy Kachori RECIPE

Dry Kachori is a deep fried crispy and crunchy balls of maida flour stuffed with spicy mix of gram flour and other spices but I used crushed gatiya in place of gram flour.

Ingredients Serving: 10

  1. All purpose flour 1 cup
  2. Baking soda 1/2 tsp
  3. Hot oil 2 tab sp
  4. Salt to taste
  5. Water as required
  6. For stuffing
  7. Coarsely crushed gatiya 1 cup
  8. Fried and crushed peanuts 1 tabsp
  9. Hing powder 1/4 tsp
  10. Haldhi powxer 1/2 tsp
  11. Cummin powder 1 tsp
  12. Daniya powder 1 tsp
  13. Red chilli powder 1tsp
  14. Amchur powder 1 tsp
  15. . Garam masala powder 1 tsp
  16. Crushed fennel seeds 1 tsp
  17. Crushed carrom seeds 1 tsp
  18. Dry ginger powder 1 tsp
  19. Sugar 2 tabsp
  20. Oil 2 tab sp for mixing
  21. Oil for deep frying.

Instructions

  1. 1. In bowl add salt, all purpose flour and warm oil and mix well
  2. 2) 2. Add water as needed and knead smooth dough. Cover the dough and leave for 30 minutes
  3. 3. Heat 2ab sp oil ,add all spicy ingredients given for stuffing and saute. Add fried and crushed peanuts and crushed gatiya
  4. 4. ‎Mix well and switch off the flame.Keep aside for cooling
  5. 5. Divide the dough in same equal portion
  6. 6. Give them a shape of ball and roll each ball into thick puri
  7. 7.  Put 1 tab sp of stuffing in the middle and seal the edges and give it a shape of smooth ball
  8. 8. Heat oil in a kadai and deep fry 5 to 6 kachories in medium to low flame until they turn light brown
  9. 9.  Store in airtight container cool and dry place
