ABOUT Maharashtrian Sev Bhaji RECIPE

It is a typical Khandeshi dish. Thus, most popular and savoured recipe in the khandesh region and particularly Jalgaon. Sev bhaji is also serverd in roadside dhabas when you enter the region. Add khandeshi masala for the authenticity. You can also add home made garam masala to the dish. It will give you different tastes and variety to the dish.

Ingredients Serving: 6

  1. Two cups besan sev
  2. Oil 1 cup
  3. Two onion chopped
  4. 2 tomatos chopped
  5. Dry coconut 2 inches
  6. Corriender leaves chopped 1/2 cup
  7. 2, green chilli
  8. Garlic 1 inch jeera 1 tsp
  9. Ginger 1 inch
  10. Salt to taste
  11. Red chilli powder 1 tsp
  12. Dhaniya powder 1 tsp
  13. Goda masala 1 tsp
  14. Haldi powder 1 tsp

Instructions

  1. FRY 2 ONIONS IN 2 TSP HOT OIL
  2. ADD 1/4 CUP DRY COCONUT, SAUTE TILL BROWN
  3. ADD 2-3 DRY RED CHILLIES & 8-10 GARLIC CLOVES
  4. ADD 1 TBSP GINGER & 3-4 GREEN CHILLIES, SAUTE FOR 2-3 MINS
  5. PUT MASALA INTO A GRINDER, ADD 1 TBSP CUMIN
  6. ADD 2 TOMATOES & A HANDFUL OF CORIANDER, GRIND INTO A SMOOTH PASTE
  7. FRY GROUND MASALA PASTE IN 1/2 CUP HOT OIL
  8. ADD 1 TSP EACH OF TURMERIC & CORIANDER POWDERS
  9. ADD 1 TSP EACH OF RED CHILLI & GODA MASALA, SAUTE
  10. ADD 1/4 CUP WATER, COOK TILL THE OIL SEPERATES
  11. ADD 2-3 CUPS HOT WATER
  12. ADD SALT TO TASTE & 2 CUPS THICK CHICKPEA FLOUR SEV, COVER & COOK FOR 5-7 MINS
  13. GARNISH WITH FRESH CORIANDER
