ABOUT Southindian Vegetable Bajji RECIPE

My favorite dish as a kid was Bajji, both my mother and grandma would always make this for me. Also whenever we have guests over this was the goto dish that we made along with hot halwa for the guests. Such a delectable and yummy dish that kids will love as well.

Ingredients Serving: 4

  1. 1 cup maida or pancake flour
  2. 2 cups besan or chickpea flour
  3. 3 cups oil
  4. Green chutney to serve
  5. Ketchup to serve
  6. Pinch of baking soda
  7. Red chutney to serve
  8. 1 cup vegetables such as potatoes sliced thin, eggplant sliced thin, onions sliced thin, Paneer cubes
  9. salt to taste
  10. 2 cloves garlic
  11. sprig of mint
  12. 2 spoons red chilli powder
  13. 1 cup water to mix
  14. 1 bunch of coriander leaves

Instructions

  1. Take a pan and add the pancake flour or maida with the besan add the baking soda and mix well with water
  2. in a mixer add garlic cloves, mint and coriander and grind smoothly and add to the batter
  3. Add the salt and chilli powder
  4. Heat oil in a kadai , dip the vegetables in the batter and fry 3-4 at a time
  5. drain in a tissue paper and serve hot with ketchup, green and red chutneys
