Ingredients to make Tomato and beetroot soup

  • 1 medium sized Beetroot
  • 1 tbsp Butter
  • 4-5 medium sized Tomatoes
  • 2 medium sized Onions
  • 6-7 cloves of Garlic
  • 1 tbsp Fresh cream for garnishing
  • Salt and fresh ground pepper as per taste

How to make Tomato and beetroot soup

  1. Peel the beetroots and chop them coarsely.
  2. Chop the tomatoes and onions and boil all the above veggies in a pressure pan for 3 whistles on a medium flame.
  3. Open the pressure pan and let it cool. Once it is cooled down, puree the soup in a food processor.
  4. Strain the soup and pour it in a bowl.
  5. Take a small pan and add butter in it, once it melts add garlic and saute for 30 seconds.
  6. Mix this to the soup and add freshly ground pepper and salt as per taste.
  7. Pour the hot soup into bowls and garnish it with fresh cream.
  8. Serve it with bread croutons or bread sticks.
