ABOUT Jaipuri Dal Stuffed Aloo Tikkis RECIPE

I definitely dig out time to devour the hot Aloo tikkis with tangy drooling chutneys. The filling consists of dal sauteed with spices. You can adjust spices to suit your taste. Also instead of dal any stuffing can be used.

Ingredients Serving: 4

  1. FOR OUTER COVERING
  2. Potatoes 400 grams boiled and mashed
  3. Bread crumbs 1/2 cup and more for dabbing
  4. cornflour 1 tablespoon
  5. Salt to taste
  6. Red Chilli Powder 1/2 teaspoon
  7. Coriander powder 1 teaspoon
  8. Garam masala 1/2teaspoon
  9. Juice of 1 lime
  10. For stuffing:
  11. Yellow Moong dal 1/3 cup boiled till 'al dente'.
  12. Cloves 4 crushed
  13. Fennel powder 1 teaspoon
  14. Cumin powder 1 teaspoon
  15. Coriander powder 1 teaspoon
  16. red chilli powder 1/4 teaspoon
  17. Garam masala powder 1/4 teaspoon
  18. Small raisins (kishmish) 1/8 cup
  19. Cashewnuts 1/8 cup cut into small pieces
  20. Oil 2 tablespoon
  21. Asafoetida a pinch
  22. A few sprigs of chopped coriander leaves
  23. Salt to taste
  24. Oil for shallow frying
  25. Green coriander chutney and sweet tamarind chutney used as accompaniments

Instructions

  1. FOR OUTER COVERING:
  2. Mix mashed potatoes with all the mentioned ingredients
  3. Smoothen the potato mixture and keep aside
  4. FOR STUFFING
  5. Heat 2 tablespoon oil
  6. Add the cumin powder, crushed cloves, fennel powder, asafoetida, coriander powder, chiili powder and salt
  7. Now add the moong dal to this spice mixture and mix nicely
  8. Lastly add chopped coriander, raisins and cashewnuts
  9. Mix and keep aside.
  10. TO PROCEED:
  11. Grease your palms
  12. Take 60 grams of potato mixture and flatten it on your palm
  13. Fill one tablespoon of daal mixture in the centre of the potato mixture.
  14. Lift and bring together the edges of the potato mixture to make a tikki
  15. Smoothen the tikki and make it slightly flat.
  16. Dab with breadcrumbs
  17. Repeat procedure for the other tikkis
  18. Shallow fry tikkis till crisp and golden brown
  19. Serve with coriander chutney and sweet tamarind chutney
