Ingredients Serving: 4

  1. All purpose flour / maida - 2 cup
  2. Oil - 2 tbsp
  3. Salt - to taste
  4. Carom seeds - a pinch
  5. Water - as required
  6. Oil - for frying
  7. For stuffing
  8. Finely chopped onion - 4 medium size
  9. Cumin seeds - 1/4 tsp
  10. Asafoetida / hing - a pinch
  11. Roughly crushed coriander seeds - 1 tsp
  12. Crushed fennel seeds - 1 tsp
  13. Finely chopped green chilly - 1 tsp
  14. Ginger paste - 1/2 tsp
  15. Red chilly powder - 1/2 tsp
  16. Turmeric powder - 1/4 tsp

Instructions

  1. Heat oil in a pan.
  2. Add asafoetida,cumin seeds,crushed coriander seeds,crushed fennel seeds.
  3. Let them splutter and saute for one mins.
  4. Then add chopped green chilly and ginger paste.
  5. Add onion and saute for 2 - 3 mins.
  6. Add gram flour,red chilly powder,turmeric powder and garam masala powder and cook for 3 - 4 mins.
  7. Add amchur powder and salt and mix well.
  8. Now stuffing is ready.
  9. For making kachoris
  10. Heat enough oil in a pan for deep frying.
  11. First on high flame then make it medium or slow.
  12. Now divide the dough into equal size ball.
  13. Now flatten the balls with your palm..
  14. Place a small ball of the stuffing in the centre and seal it properly.
  15. Now roll the balls.
  16. It should be little thick.
  17. Place the kachori in the oil for frying.
  18. Fry in small batches.
  19. Fry until becomes brown and crispy.
  20. Serve hot.
