ABOUT Rajasthani Malai Mirchi RECIPE

A lovely condiment. Goes very well with Indian cuisine.

Ingredients Serving: 10

  1. 100 gms green chillies
  2. 2-3 tbsp cream/ Malai
  3. Pinch of asfoetida
  4. 1 tsp fennel seeds
  5. 1/2 tsp cumin
  6. 1/2 tsp mango powder
  7. 1/3 tsp turmeric
  8. 1 tsp coriander powder
  9. 1 tbsp ghee
  10. Salt to taste

Instructions

  1. Chop the green chillies into bit size pieces
  2. Heat the ghee in a Kadhai
  3. Add in the asfoetida, cumin
  4. When the cumin crackles add the fennel seeds coriander powder and turmeric cook for a few seconds
  5. Add the chillies, salt and mango powder
  6. Cover with a lid and cook on a low flame for 5-7 minutes.
  7. Uncover the chillies which will be soft by now
  8. Add in the Malai and cook stirring it all the while till the Malai releases ghee.
  9. It’s done
