ABOUT Leopard print tinde/Apple Gourd in gravy RECIPE

This recipe is from my treasure trove. As kids we used to call this dish as leopard print wali sabji as the final look of this sabzi is kinda similiar to leopard skin spots.

Ingredients Serving: 3

  1. Tinde/applegourd 200 gms chopped into halves
  2. Potato 1 big cut into thick roundels
  3. Garlic crushed coarsely 8 flakes
  4. Green chilli 1
  5. Sukha kokam 4 pcs soaked in water for few minutes
  6. Lalmirch powder 1 tsp
  7. Dhania powder 1 tsp
  8. Haldi 1/2 tsp
  9. Salt to taste
  10. Kasuri Methi 2 tsp
  11. Green coriander leaves handful
  12. Wheat flour 3 spoons mixed with water to make paste
  13. Clarified butter/ghee 2 tsp

Instructions

  1. In a heavy bottom pan put ghee.
  2. Add coarsely crushed garlic nd coriander leaves. Saute it for few seconds.
  3. Add all dry masalas and kasuri methi crushed with palms.
  4. Add around 2 glasses of water.
  5. Add wheat flour paste.
  6. Whisk it well so that no lumps remain.
  7. Bring it to boil.
  8. Now add halves of tinde and potato pieces.
  9. Add soaked kokum to gravy. Lower the flame and cover the pan.
  10. Cook for about 15 minutes on low flame till vegetables are cooked properly.
  11. You will see garlic and kasuri methi floating on the top of gravy.
  12. It would look similar to Leopardrd skin print.
  13. Hence the name is derived like that.
  14. Check the consistency
  15. . If you wish to eat with rice keep the gravy thin and if eating with chapati keep the gravy little thick
