About Bell Pepper Rice Recipe

Bell Pepper or otherwise called as Capsicum plays a vital role in our daily life. Fresh peppers are available in different colours through out the season. The bright colours attracts everyone to buy them. They belongs to chilli family but not spicy. Bell Peppers are low in calories. The highest amount of Vitamin C in a bell pepper is concentrated in the red variety. It has multiple health benefits. They can be eaten raw in salads or stir-fried.

Bell Pepper Rice

Ingredients to make Bell Pepper Rice

  • To roast and powder: Red chillies - 2 to 3
  • Urad Dhal - 1 Tsp
  • Channa dhal - 2 Tsp
  • For Seasoning:
  • mustard seeds - 1/2 tsp
  • Urad dhal - 1/2 Tsp
  • Channa Dhal - 1/2 Tsp
  • curry leaves - 1 sprig
  • Chopped capsicum - 1
  • Cooked raw/boiled rice - 1 cup
  • Roasted peanuts - 1 handful
  • oil - As required
  • salt to taste

How to make Bell Pepper Rice

  1. Heat a pan with a drop of oil and add urad dhal, channa dhal and red chillies.
  2. Fry till they turn golden brown and set aside to cool.
  3. Once cool, grind into a smooth powder.
  4. Again heat a pan with some oil, add mustard seeds, urad dal, chana dal and allow it to splutter.
  5. Add curry leaves, chopped capsicum and fry till it gets cooked. Add cooked rice, grounded powder and salt. Give a quick stir.
  6. Serve hot.
