ABOUT Palak puri RECIPE

Palak puri is a healthy and mineral packed combination of wheat flour and spinach/palak. These puris are different from the usual puris in colour and taste. The dough is made from.wheat flour and spinach puree. Spinach is indeed a rich source of iron.

Ingredients Serving: 4

  1. 2 cups wheat flour
  2. Spinach 1 bunch roughly chopped
  3. Green chillies 2 chopped
  4. Ginger paste 1/2 teaspoon
  5. Nigella seeds (kalonji) 1/4 teaspoon
  6. Carom seeds (ajwain) 1/4 teaspoon
  7. turmeric powder a pinch
  8. Asafoetida a pinch
  9. Curd 2 tablespoons
  10. Oil 1 tablespoon for shortening
  11. Salt to taste
  12. Oil for frying

Instructions

  1. Blanch the chopped spinach alongwith chillies
  2. Cool , drain and make a puree of spinach and chillies
  3. Combine wheat flour, spinach-green chilli puree, salt, turmeric powder, carom seeds, nigella seeds , asafoetida, curd and 1 tablespoon oil.
  4. If needed add a little water and knead into a firm dough.
  5. Keep aside for around 20 minutes
  6. Divide dough into equal sized balls.
  7. Roll out each puri
  8. Deep fry each puri till it puffs up and is golden in colour.
  9. Serve with curd
