Ingredients Serving: 4

  1. 2 cups Flour
  2. 4 tsp baking powder
  3. 1/4 tsp salt
  4. 3/4 cup white sugar
  5. 1 tsp vanilla extract
  6. 3 small eggs
  7. 1 cup milk
  8. 2 cups icing sugar
  9. 1/2 cup cocoa powder
  10. 1 cup dried unsweetened coconut

Instructions

  1. Preheat oven to 190C. Grease a square cake tin with butter and set aside.
  2. In a large bowl, mix together flour, baking powder and salt.
  3. In a separate bowl, beat 1/2 cup butter and 3/4 cup sugar with electric mixer until it becomes light and fluffy.
  4. Add eggs one by one while beating continuously.
  5. Add vanilla extract with the last egg and beat.
  6. Pour the flour mixture and 1/2 cup milk. Mix until the mixture is even and smooth.
  7. Pour the flour batter in the square cake tin and bake in preheated oven for 40 mins.
  8. Check whether cake is baked by inserting a toothpick. If tooth pick comes out clean, means cake is ready.
  9. For icing, mix icing sugar, 1/2 cup butter, 1/2 cup milk and cocoa powder. It should be a thick liquid.
  10. Cut the cake in 20-24 square pieces. Dip each piece in icing and then roll in dried coconut. Place on a rack until dry. Refrigerate and serve cool.
