ABOUT Gongura Chicken Fry RECIPE

Gongura chicken fry is an Andhra style dry chicken recipe made with Gongura (Roselle)leaves. It is slightly hot, spicy and tangy. A perfect side dish. I love to have this with piping hot steamed rice and dal.

Ingredients Serving: 3

  1. Gongura leaves - 1 cup
  2. Green chilly - 5 slit 
  3. Curry leaves - 2 sprigs
  4. Cumin seeds - ½ tsp 
  5. Garam masala powder - ½ tsp 
  6. Oil - 1 tbsp 
  7. Ghee - 1 tbsp (You can use oil too)
  8. Marination:
  9. Chicken - 300 grams 
  10. Onion - 1 coarsely grounded 
  11. Lemon juice - ½ tsp 
  12. Red chili powder - 1 tsp 
  13. Coriander powder - ½ tsp 
  14. Ginger garlic paste - 1 tsp

Instructions

  1. Marinate the chicken with the marination ingredients and set aside for few mins.
  2. Heat the oil in a pan. Add the gongura leaves and saute well till they wilt off fully. Keep aside to cool.
  3. Take the gongura leaves, green chilies and grind them coarsely.
  4. In a pan add the chicken. Cover the pan and cook the chicken for about 10 mins in medium flame. Stir occasionally. Let the water released from chicken evaporate completely.
  5. Heat the ghee in a pan. Add curry leaves and cumin seeds and let them crackle. Add the chicken, garam masala powder and fry for 2-3 mins.
  6. Add the gongura paste, mix well with the chicken and fry till the moisture released by gongura leaves dries up and oil starts to leave the sides.
  7. Serve gongura chicken fry with plain rice and rasam or dal.
