Palak Paneer in general is a very popular dish on an Indian platter. It is a wholesome and a nutritious preparation of cottage cheese and spinach. But today I have given a delicious twist by adding some coconut milk. So go ahead and prepare this very delectable dish in a new avatar

Ingredients Serving: 4

  1. 1 cup cubed Paneer
  2. 2 bunches spinach, chopped
  3. 2 tbsp. oil
  4. 2 bay leaves
  5. 2-3 green cardamoms
  6. 4-5 cloves
  7. 1" cinnamon stick
  8. 1/2 mace
  9. 1 tsp. cumin seeds
  10. 1 onion, chopped
  11. 1 tsp. ginger, grated
  12. 1 tsp. garlic, crushed
  13. 1 green chilies, chopped
  14. 1/2 tsp. turmeric powder
  15. salt to taste
  16. 1 tsp. red chili powder
  17. 1/2 tsp. cumin powder
  18. 1 tsp. coriander powder
  19. 1 tsp. tomato paste
  20. 1/2 tsp. garam masala powder
  21. 1 cup coconut milk
  22. 1/2 cup water
  23. 1 sprig curry leaves

Instructions

  1. Fry the chopped spinach till dry. Keep it aside. Heat oil in the same pan and temper with cumin seeds, bay leaves, cinnamon, cardamoms, cloves and mace. Saute for a few seconds.
  2. Add the onion, ginger, garlic and green chilies. Fry till light brown. Now add in all the dry spices (except garam masala). Mix everything well.
  3. Add the tomato paste, spinach, coconut milk, curry leaves, paneer cubes, garam masala powder and 1/2 cup water. Give it a stir and cover.
  4. Simmer for 2-3 minutes. Switch off the flame and transfer to a serving dish. Serve hot with steamed rice/pulao/ biryani/naan/roti etc
