ABOUT Shorbat Adas (Egyptian Red Lentil Soup) RECIPE

Middle East is known to be the origin of Lentil seeds. The most common & famous name for this soup in Egypt is “Shorbat-Adas”. Adas is considered to be a main dish mainly because it is so filling, and is usually eaten with pita bread & lemon wedges. Lentils are a rich source of numerous essential nutrients, particularly dietary fiber and protein.

Ingredients Serving: 5

  1. 1 cup diced carrot
  2. 1 cup diced tomato
  3. 1 big Onion chopped
  4. 1/4 cup heavy whipping cream or 1/2 cup coconut milk
  5. 3 cups vegetable stock
  6. 1 cup water
  7. 1 cup red lentils washed and drained
  8. 1 tbsp ginger paste
  9. 1 tbsp minced garlic
  10. 2 tbsp olive oil
  11. 1 tsp ground cumin
  12. 1/2 tsp ground coriander
  13. 1/2 tsp red chili powder
  14. 1/2 tsp turmeric
  15. 1/2 cup yogurt
  16. 2 sprigs of fresh mint
  17. Juice of 1/2 lemon

Instructions

  1. Heat the oil in a pan.Add chopped onions and a pinch of salt. Saute for 2 minutes.
  2. Add ginger , garlic and saute for a minute
  3. Add carrots, tomatoes. Cover and cook for 3-4 minutes
  4. Now add spices and mix well. After cooking for another 2 minutes, add the lentils to the pot.
  5. Add the vegetable stock,cover and let the soup boil on medium flame for 15 minutes.
  6. Add coconut milk, cover and cook for another 5 mins. If using cream, stir in the cream in the soup , mix well. Switch off
  7. Add salt as per taste and mix well. Serve hot with the yogurt-mint dip along with warm Pita or Black-Beans Tortilla Chips.
