Palak Rice

Ingredients to make Palak Rice

  • 500 gms spinach leaves
  • 1/2 cup chopped coriander leaves
  • 1 inch ginger
  • 5-6 garlic cloves minced
  • 7-8 tbsp oil
  • 1 tsp cumin seeds
  • 2 bay leaves
  • 2 red chilies
  • 1-2 star anise
  • 2 Black cardamom
  • 7-8 cinnamon stick
  • 6-7 cloves
  • 1/4 cup chopped almonds, cashews & raisins
  • 2 medium onions chopped
  • 1 tbsp Garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp kashmiri red chili powder
  • 1/2 tsp coriander powder
  • 2 medium tomatoes chopped
  • salt to taste
  • Green food colour (optional)
  • 200 gms basmati rice cooked

How to make Palak Rice

  1. Blanch the spinach leaves , grind it with coriander leaves to form puree
  2. Heat oil in a kadhai, splutter cumin seeds. Add the whole spices and saute for around 30-45 secs on low heat
  3. Add the minced garlic and grated ginger, saute till the raw aroma diminishes. Add the chopped onions and cook till it turns golden
  4. Add the chopped tomatoes and saute till it turns tender and mushy and oil starts to separate.
  5. Add spice powders and cook for around a minute. Add the palak puree and cook till the oil starts to separate. if required , add food color
  6. Add cooked rice, mix well. Cover and cook till the flavor blends with the rice.
  7. Fry nuts and raisins. Garnish rice with fried nuts and raisins. Serve hot with raita
