Ingredients Serving: 4

  1. Mustard leaves (sarso ka saag )- 1 bunch
  2. Spinach leaves- 1/2 bunch
  3. Bathua leaves 1/2 bunch
  4. 2 medium sized Onion sliced
  5. Tomato -3 medium sized
  6. Ginger -2 inch
  7. Green chili - 2-3
  8. Garlic- 7-8 cloves
  9. Hing a pinch
  10. Makki ka aata -2 tsp
  11. Salt to taste
  12. Oil 4-5 tsp
  13. Ghee -2 tsp
  14. Water as required

Instructions

  1. Wash and clean mustard ,spinach and bathua leaves. Drain water and roughly chop them
  2. Add all saags, tomato, Green chilies , Garlic, Ginger, Salt and one cup of water in a pressure cooker. Cook it for 1-2 whistles over medium flame.
  3. Allow the mixture to cool completely
  4. Grind the saag mixture with corn meal flour to a smooth puree. Now transfer this puree to a pan.
  5. Cook for 10-15 minutes over low flame stirring occasionally
  6. Heat ghee in a small pan over medium flame. Add sliced onion, green chilies and stir fry until onion turns light brown. Pour this mixture over cooked saag.
  7. Sarson ka saag is ready to eat. Serve with butter and makki ki roti
